You peek at your kombucha and see something unfamiliar growing on the surface. Your heart sinks. Is it mold? Is it safe? The answer depends on exactly what you're looking at — and the two most common culprits look quite different.

Kahm Yeast: Ugly but Harmless

Kahm yeast is a wild yeast that sometimes colonizes fermented beverages. It's not dangerous, but it can affect flavor.

How to Identify Kahm Yeast

  • Appearance: A thin, wrinkled, white film on the surface — think crumpled tissue paper
  • Texture: Flat and smooth or slightly wrinkled, never fuzzy
  • Color: White to cream, occasionally with a slight tan hue
  • Pattern: Tends to form a continuous film rather than isolated spots
  • Smell: May smell slightly yeasty or off, but not foul

What to Do About It

Kahm yeast won't hurt you, but it can impart off-flavors:

  1. Skim it off — use a spoon to carefully remove the film from the surface
  2. Taste the kombucha — if it tastes fine, continue fermenting
  3. If flavors are off — discard the batch but keep the SCOBY (rinse it in distilled vinegar)
  4. Prevent recurrence — kahm yeast often appears when pH is too high (not acidic enough) or when the brew is disturbed frequently

Mold: The Real Danger

Mold on kombucha is rare but serious. If you confirm mold, you must discard everything — the SCOBY, the liquid, and start completely fresh.

How to Identify Mold

  • Appearance: Fuzzy or furry raised patches
  • Texture: Three-dimensional — it rises above the surface
  • Color: Blue, green, black, white, or gray fuzzy spots
  • Pattern: Circular colonies that grow outward from a central point
  • Location: Always on the air-exposed surface, never submerged
  • Smell: Often musty or unpleasant

Why You Must Discard Everything

Mold produces mycotoxins that penetrate into the liquid. Skimming the visible mold off the surface does not make the kombucha safe — the toxins are invisible and dissolved throughout.

What's Not Mold or Kahm

New brewers often mistake perfectly normal growths for problems:

  • New SCOBY formation — a thin, translucent film forming on the surface is a baby SCOBY growing. This is a sign of a healthy brew
  • Brown yeast strands — stringy, brown tendrils hanging from the SCOBY's underside are normal yeast colonies
  • Tea staining — dark spots or discoloration on the SCOBY from tea pigments
  • Air bubbles — trapped CO₂ can create bumpy, uneven textures on a forming SCOBY

Preventing Both Issues

  • Always use enough starter liquid — 1–2 cups per gallon keeps the pH low enough to inhibit unwanted organisms
  • Keep your brew covered — a tightly secured cloth keeps fruit flies and airborne contaminants out
  • Don't disturb the jar — moving it disrupts the surface and can allow contaminants to establish
  • Maintain proper temperature — 75–85°F (24–29°C) favors kombucha organisms over invaders
  • Use clean equipment — rinse everything with hot water (no soap residue — it can harm the SCOBY)

Document Your Observations

When something unusual appears on your brew, take a photo immediately. Having a visual record helps you compare across batches, identify recurring issues, and get advice from fellow brewers.
