Seasonal Kombucha Flavors: A Year-Round Brewing Calendar

One of the best things about brewing your own kombucha is matching your flavors to the seasons. Using fresh, seasonal ingredients gives you the best flavor, the lowest cost, and a constantly rotating menu that keeps brewing exciting all year long.

Spring (March – May)

Spring is about bright, fresh, floral flavors that match the energy of the season.

Strawberry Rhubarb

A classic spring combination. Rhubarb's tartness balances the sweetness of early strawberries.

  • 2 sliced strawberries + 1 tbsp diced rhubarb per 16oz bottle
  • Compote the rhubarb briefly before adding (raw rhubarb can be fibrous)

Elderflower

Delicate, aromatic, and sophisticated.

  • 1 tsp dried elderflower or 1 tbsp elderflower cordial per bottle
  • Pairs beautifully with a green tea base

Meyer Lemon Thyme

Bright and herbaceous.

  • 1 tbsp fresh Meyer lemon juice + 1 sprig of thyme per bottle
  • Add a pinch of sugar to ensure carbonation

Cucumber Mint

Cool and refreshing — perfect as spring warms up.

  • 3–4 thin cucumber slices + 3 mint leaves per bottle
  • Muddle the mint slightly before adding

Summer (June – August)

  • Watermelon is very sugary — shorten F2 by a day

  • Use the ripest peaches you can find — they'll carbonate faster

Blackberry Sage

Earthy and fruity.

  • 3–4 blackberries (lightly mashed) + 1 sage leaf per bottle
  • Gorgeous deep purple color

Pineapple Jalapeño

Tropical heat.

  • 2 tbsp pineapple chunks + 1 thin jalapeño ring per bottle
  • Remove jalapeño seeds for mild heat, keep them for a real kick

Autumn (September – November)

As temperatures cool, shift to warm spices and harvest fruits.

Apple Cinnamon

Autumn in a bottle.

  • 2 tbsp fresh apple juice or diced apple + ¼ cinnamon stick per bottle
  • Use tart apple varieties (Granny Smith, Honeycrisp) for the best balance

Pear Cardamom

  • 2 tbsp diced ripe pear + 1 crushed cardamom pod per bottle
  • Pear is subtle — let F2 go an extra day for flavor to develop

Cranberry Orange

  • 1 tbsp cranberry juice (not cocktail) + 1 strip orange zest per bottle
  • Cranberries are low-sugar — add ½ tsp sugar to help carbonation

Fig Vanilla

  • 1 dried fig (quartered) + ¼ tsp vanilla extract per bottle

Winter (December – February)
